Breakfast Hash with a Smoked Cauliflower Cheese Sauce

Breakfast is my favorite meal of the day. During the week, I'm on the go with a smoothie in hand. When the weekend rolls around, I'm taking the time to make a nice hot breakfast. Tofu scrambles are a staple in our house. Enjoy!


Breakfast Hash with a Smoked Cauliflower Cheese Sauce

Ingredients

Smoked Cauliflower Cheese Sauce
2 cups cooked cauliflower, chopped
3 tbsp non-dairy milk
1 tsp miso paste
Juice from 1/2 a lemon
1 1/2 tbsp nutritional yeast
1/2 tsp smoked paprika
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 white pepper
salt to taste

Potato Hash
1-2 tbsp olive oil
2 cups diced baby potatoes
1 red bell pepper, sliced
1/2 red or yellow onion, sliced
1-2 handfuls of shredded purple cabbage
1 handful chopped kale
garlic salt
onion powder
parsley
salt and pepper to taste

Tofu Scramble
350g medium firm organic tofu
1/4 cup non-dairy milk
1/2 tsp curry
1/2 tsp turmeric
1/4 tsp onion powder
1/4 tsp garlic powder
salt & pepper to taste


Directions

Prepare Smoked Cauliflower Cheese Sauce

  1. Using a blender or food processor, add all ingredients and blitz until smooth. Set Aside.

Cook Potato Hash

  1. In a large skillet over medium-high heat, add olive oil. After a couple minutes, add your diced potatoes. Fry them for about 4 minutes.
  2. Next, add the chopped onions. Cook for 2-3 more minutes until they start to slightly soften.
  3. Add your bell pepper and cook for another 2-3 minutes. Stirring and flipping often.
  4. Once the hash looks almost done, add the cabbage and kale. Cook for another 2-3 minutes until they soften. 
  5. Season by adding the rest of the hash ingredients. Remove from heat and set aside.

Cook Tofu Scramble

  1. Over medium-high heat, add a bit of oil to a large skillet.
  2. Crumble the tofu with your fingers into the pan. Stir often.
  3. Cook for for a few minutes until it start to brown slightly.
  4. Add your non-dairy milk and the rest of the ingredients.

Bring it all together

  1. Warm the cauliflower sauce, if desired.
  2. Combine the potato hash and tofu scramble. Plate and drizzle the cauliflower cheese sauce over top.

Serve immediately and enjoy!
