Beet Hummus Bagel Sandwich

This colourful bagel sandwich is packed with vegetables and flavour!

Beet Hummus Bagel Sandwich

Ingredients

your favourite vegan bagels
store bought beet hummus
sauerkraut (optional)
fresh basil leaves
half an avocado
lemon wedge
lettuce
sprouts


Directions

  1. Start by smothering a layer of the beet hummus on both sides of a bagel.
  2. In a bowl mix half an avocado with the juice of a lemon wedge. The lemon juice will help slow the oxidization process (turning brown when exposed to air).
  3. Mash the avocado on top of the hummus.
  4. Layer the rest of the ingredients to finish off the sandwich. Feel free to pack it with your own fresh ingredients, this is just what I had on hand (it was delicious though).
